This holiday-inspired recipe comes to us from NASM certified personal trainer Adam Cole. Like us, he is all about 1) celebrating life and taking care of his nutritional habits with clean, whole foods and natural ingredients and 2) avoiding processed extras, refined sugars, and treats filled with soy and corn syrup.

Soft-baked Chocolate Pumpkin Spice Cookies

DRY INGREDIENTS:

  • 2 cups coconut or almond flour (one cup of each also works)
  • 4 scoops Promix Protein Powder
  • 1 teaspoon salt
  • 1 1/2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon ground clove
  • 10 ounces (5 bars) Promix Paleo Chocolate, broken into small pieces or chocolate chips of choice

WET INGREDIENTS:

  • 1 cup coconut sugar
  • 2 eggs
  • 1/2 cup coconut oil (melted in microwave or using double boiler technique)
  • 1 1/2 cups pumpkin puree
  • 1 teaspoon vanilla extract

INSTRUCTIONS:

  1. Preheat the oven to 350°F.
  2. Loosely mix wet and dry ingredients in separate bowls.
  3. Combine wet and dry ingredients and mix more thoroughly, until batter is smooth and holds some shape.
  4. Prepare 1-2 baking sheets by greasing or laying down a fitted sheet of parchment paper.
  5. Roll 12 balls of dough and place equidistantly on baking sheets.
  6. Bake cookies for 8-10 minutes.
  7. If necessary, rotate the pan and bake for another 8-10 minutes.
  8. Let cool completely before serving. Yields 1 dozen cookies.

PRO TIP
